Ingredients

  • 1 can chickpeas (garbanzos), drained
  • 3/4 cup grape tomatoes, halved
  • 3/4 cup Persian cucumbers, peeled and diced
  • 3/4 cup red onion, chopped
  • 1/2 avocado
  • 2 teaspoons apple cider vinegar
  • Juice of lemon wedge (1/4 of lemon)
  • 1 teaspoon salt (optional)
  • Pepper, freshly ground

Directions

  • Mix ingredients in a bowl and serve.
