Vegan Keema Matar (Vegan Minced Meat with Peas)

Ingredients

  • 1 tablespoon olive oil
  • 1 cup onion, diced
  • 1 teaspoon garlic, minced
  • 1/4 teaspoon ginger, minced
  • 1/4 teaspoon jalapeño, minced
  • 12 ounces vegan minced meat (such as Gardein beefless ground), thawed
  • 3/4 cup peas, thawed
  • 2 teaspoons Patak's Hot Curry Paste
  • Salt to taste

Directions

  • 1)

    In a skillet, heat the oil over medium-high heat until it shimmers in reflected light, about 1 minute.

  • 2)

    Add the onions, but do not stir immediately. When one piece of chopped onion starts to turn brown around the edges, wait 45 seconds before stirring.

  • 3)

    Lower heat to medium and add garlic and cook for 1 minute.

  • 4)

    Add ginger and jalapeño and cook for 30 seconds.

  • 5)

    Add green peas and cook for 30 seconds.

  • 6)

    Add the vegan minced meat and curry paste and cook for two minutes.
