Pol Sambol (Coconut Sambol)

My Aunt Thyagie, who gave me this recipe, says this is a favorite among the many tourists who come to Sri Lanka. It can be enjoyed with rice and curries or a slice of bread.

Ingredients

  • 1 cup desiccated coconut
  • 1 tablespoon water
  • 1 teaspoon crushed cayenne pepper
  • 1/8 teaspoon jalapeno, minced
  • 3 1/2 tablespoons shallots, finely chopped
  • 2 tablespoons lime juice

Directions

  • 1)

    In a mini food processor, pulse the coconut with the water to moisten.

  • 2)

    Add the remaining ingredients and pulse. Add salt to taste.

  • 3)

    Place in serving bowl.
