Pan-Roasted Cauliflower (Oil-Free)

Ingredients

  • 5 cups cauliflower, sliced
  • 3 teaspoons garlic, minced
  • 2 tablespoons aquafaba
  • 1 tablespoon Patak's Hot Curry Paste
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon salt (optional)
  • 1/4 teaspoon black pepper, freshly ground
  • 3 dried cayenne peppers, broken in half

Directions

  • 1)

    Preheat oven to 425° F.

  • 2)

    Slice cauliflower head into half and then into 1/8-inch thick slices. Put in a large mixing bowl.

  • 3)

    In a custard cup or other small bowl, mix aquafaba, curry paste, turmeric, salt and black pepper. Add the mixture plus the cayenne peppers and garlic to the cauliflower. Using kitchen gloves, gently massage to coat the cauliflower pieces with the mixture.

  • 4)

    Spread cauliflower on a roasting pan.

  • 5)

    Bake for 17 minutes.
