Yellow Rice Pilaf

Ingredients

  • 1 1/2 cups basmatic rice
  • 2 1/2 cups water
  • 2 cardamom pods
  • 2 whole cloves
  • 2 whole black peppercorns
  • 1/8 teaspoon turmeric
  • 2 scallions (green onions), chopped
  • 1/2 cup carrot, shredded
  • 1 cup frozen peas, thawed
  • 1/2 cup dry-roasted cashews (unsalted)
  • 1/4 cup golden raisins

Directions

  • 1)

    Wash and drain the rice three times, using fresh water each time.

  • 2)

    Tap the cardamom pods with a pestle until they split open. You will use both the husk and seeds in this dish.

  • 3)

    To the inner pot of a rice cooker, add the rice, 2 ½ cups water, cardamom, cloves and peppercorns and soak for 30 minutes.

  • 4)

    Stir in the turmeric and cashews and cook rice.

  • 5)

    As soon as the rice is cooked, immediately stir in the scallions, peas and carrot. Cover with lid and allow to steam.

  • 6)

    Remove rice from inner pot of rice cooker to a serving dish.
